Tomorrow I am cooking. I must. We have not eaten at home in 4 days. That’s 4 days of huge amounts of calories that didn’t need to be. Money we didn’t need to spend.

Arby’s, Italian, Mother’s day brunch, I don’t even remember them all. It’s really bad.

I am trying to be healthy, but this time around I want to eat everything in sight. Everything and anything. I was hungry so I opened the freezer… mmmm, hotdogs! I was able to contain myself, but then I moved on to the fridge mmm, cheese! CHEESEDOG! It was so tempting and difficult not to eat that. I am still drooling over it two days later. But it was 10:30pm.

So tomorrow I am going to find something in the freezer and cook it. I will try to stay away from pasta and ice cream. But I make no promises.

Any ideas on a quick and vaguely healthy meal? What do you do when you don’t want anything you have in your fridge?

    I make soup!  I seriously make up my own version of a soup using whatever I have around the house.  Here’s a list of ingredients I work with! Canned beans (really healthy and filling if you put in a can of low sodium mixed beans), canned or frozen corn, carrots, zucchini, canned tomatoes, potatoes, rice, noodles, salsa, low sodium chicken broth ( I always keep a few on hand), celery, kale, frozen peas… the list is almost endless to what can end up in there.  You can put in thin slices of pork, make an oriental type soup with celery, carrots, mushrooms, and oriental seasoning.  You can make a spicy mexi-type soup by putting in a bit of cooked & drained ground beef, can beans, can tomatoes, can corn and cup or so of salsa, season to taste as spicy as you want and add sour cream.  See?  Soup has endless possiblities, and I make either healthy muffins or biscuits (with bran) to add some carbs if the soup doesn’t have rice, potatoes or noodles already in it.  It’s a fast solution if you have broth already on hand.
