Super easy Roasted Red Pepper Sauce
Big Brother is allergic to tomatoes so I have been experimenting with the uses of red peppers. I came up with a tasty recipe for Roasted Red Pepper sauce to use in place of tomato sauce.
What you’ll need:
2 jars roasted sweet peppers
1 1/2 cups of chicken broth (I make mine using the juice from the jar and bouillon)
2 tbsp balsamic vinegar
2 tbsp olive oil
2 tbsp each oregano, basil, garlic, parsley
1-2 tbsp sugar (this will depend on the brand of peppers you buy, some are already sweet enough)
salt and pepper to taste
Toss this all in a blender, blend until desired consistency, then heat in a pan. I made mine thin and added browned ground beef for pasta, and made it chunkier for pizza.
