Big Brother is allergic to tomatoes so I have been experimenting with the uses of red peppers. I came up with a tasty recipe for Roasted Red Pepper sauce to use in place of tomato sauce.

What you’ll need:

2 jars roasted sweet peppers

1 1/2 cups of chicken broth (I make mine using the juice from the jar and bouillon)

2 tbsp balsamic vinegar

2 tbsp olive oil

2 tbsp each oregano, basil, garlic, parsley

1-2 tbsp sugar (this will depend on the brand of peppers you buy, some are already sweet enough)

salt and pepper to taste

Toss this all in a blender, blend until desired consistency, then heat in a pan. I made mine thin and added browned ground beef for pasta, and made it chunkier for pizza.

Enjoy!

That recipe sounds great!!  I am also allergic to tomatoes and make a similar roasted red pepper sauce!  It’s neat to find someone else with the same idea!!  Thanks for sharing!

    • Oh wow, I would love to know your recipe, most of the ones I found online have some sort of dairy in them and he can’t have that either. Are you allergic to eggplants too?

  • Awesome! My son is also allergic to tomatoes and I never thought of using peppers – which he loves. I’m pinning this now.

    • Thanks so much for pinning this, I love pinterest! I really like using the pepper sauce, it’s so close to tomato sauce so I don’t feel like we’re missing anything
