Mild Chicken Apple curry
My job has recently started doing food contests. It is a potluck style challenge with a theme item that you need to include in the dish. The first theme was apple. Most people made dessert, so there was a lot of sweets. I decided to be a bit different and make a dinner. Here is the recipe
2 chicken breasts, cubed
1 Granny Smith apple, chopped small
1 small onion chopped
2 cloves garlic, minced
1/2 cup chicken broth
1/2 cup coconut milk
1Tbl curry powder
1 1/2 Tbl flour
2 Tbl oil
Salt and pepper to taste.
Makes 4-5 servings over rice.
1. Place chicken in greased dish
2. Brown garlic, onion and apple.
3. Add curry until absorbed.
4. Add flour until absorbed.
5. Add broth an coconut milk, heat through.
6. Pour over chicken
7. Bake for 45 min at 350C
